Shelf Life Evaluation

The quality, safety, nutritional and organoleptic properties change over time , these can be improved or affected by the type of process, packaging, temperature, handling, endogenous bacteria and physico- chemical changes in food.


Synergy BioTech® Laboratory can perform stability tests to determine the shelf life of foods, beverages and cosmetics according to:


  • Microbiological testing
  • Sensory evaluations
  • Accelerated shelf life tests and mathematical models:
    • Primary model, e.g. Gamma model
    • Secondary model, e.g. Arrhenius model
    • Tertiary model, e.g. ComBase®

The design and development of each project depends on the type of product, process, storage conditions, retail exposure, type of packaging and handling.


Challenge Tests

The test is performed if the food or drink produced may have an initial load of pathogenic contamination, and the food or drink support its preservation or growth during its shelf life.


Methodology:


  • The test consist of inoculating the product with pathogens that are endogenous to itself, we then incubate it at different temperatures simulating its recommended and abused temperature during its shelf life. Periodic analyzes are performed to assess the feasibility of growth of the initial contamination.

The design and development of each project depends on the type of product, process, storage conditions, storage exposure, type of packaging and handling.


Results interpretation

Hire four or more analysis in a year and we will provide you with the interpretation of the results issued.


Training

Members Synergy BioTech® and the companies that hire the services with a minimum of four collections per year, are entitled to select a training course for 25 people for eight hours in the following topics:


  • HACCP: Implementation, Validation and Verification
  • Internal Auditor in Food Safety Management System
  • Microbiological Assurance in Food Plants

Includes certificate of participation and study materials for each participant.
